  • 1 stick of butter or margarine, cold and cut in 1-inch chunks
  • 1/2 cup flour
  • 1/3 cup dark brown sugar
  • 1/2 cup quick oats
  • 1/4 tsp. nutmeg
  • 1/2 cup of whole nuts
  • 1/2 cup of rice crisp cereal

Directions: In a food processor or with a pastry blender, pulse together the butter, flour, brown sugar, oats, and nutmeg. Once the butter is in pea-size chunks, add nuts and pulse twice. Add the rice crisp cereal, pulsing just enough to stir it in. Sprinkle over fruit, then cover with a paper towel. This prevents splatters, holds in heat, and allows the steam to escape so the topping doesn't get mushy. Microwave on 70% power for 2 – 6 minutes, depending on size of the bowl and density of the fruit. Serve with a scoop of ice cream or whipped cream on the side.

Note: This topping is convenient to have on hand for entertaining. It can be made in quantity and stored in the refrigerator or freezer. It can be used over peaches, berries, and other fruits.
