Ingredients
- 2 tbsp safflower oil
- 1/4 cup chopped onion
- 1/2 cup minced fresh parsley
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1/2 tsp ground coriander
- 1/2 tsp dried oregano
- 1/4 tsp pepper
- Dash of ground cumin
- 3 cups cooked chickpeas
- 4 tbsp lemon juice
- 1/4 cup toasted sesame seeds

Step 1
Heat oil in a small skillet; saute onion until soft. Add parsley, garlic, basil, coriander, oregano, pepper, and cumin. Stir over medium heat just long enough to soften the parsley.
In a food processor or blender, combine the chickpeas and lemon juice; process until smooth. Stir into onion-and-herb mixture; add sesame seeds. Refrigerate.
Use Hummus as a dip with whole wheat crackers or as a spread on small open-faced appetizers made with whole wheat bread or cucumber slices and garnished with tomato slices. Or, make sandwiches with pita bread. Stuff pita bread pockets with the Hummus, shredded lettuce, chopped tomatoes, shredded cheese, and sprouts.
