Ingredients

  • 1 cup cornmeal
  • 1/2 cup whole wheat flour
  • 1/4 cup soy flour
  • 1/4 cup wheat germ
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1/4 cup oil
  • 3 tbsp honey
  • 1 cup milk
  • 1 cup grated natural Cheddar cheese
  • 1/2 cup chopped nuts

Preparation

Step 1

Combine cornmeal, flours, wheat germ, baking powder and salt in mixing bowl. Set aside. Mix together egg, oil, honey and milk; add cheese and nuts. Add wet ingredients all at once to dry ingredients; mix just enough to moisten. Fill oiled muffin tins 2/3 full. Bake at 375 F for 25 minutes.
