Ingredients
- 1 lbs medium potatoes, cut into eighths or mini potatoes, halved 750 g
- 1 /3 cupolive oil 75 mL
- cupFRENCHS Dijon Mustard 50 mL
- 1 tbsp dried oregano, basil or rosemary leaves15 mL
- Salt & pepper to taste

Preparation
Step 1
PLACE potatoes in large baking dish or roasting pan.
COMBINE remaining ingredients. Drizzle over potatoes. Toss to coat.
BAKE at 425 F (220 C) for 30 to 40 minutes stirring often until potatoes are tender.
Tips: Be sure to stir the potatoes often for even cooking and browning. Leftovers can be a good thing.
Enjoy them cold as a salad.
