Rice Sticks (Py Mai Fun)

Rice sticks are an interesting oriental noodle made of rice and water. They're available in oriental specialty shops and in the oriental foods sections of many supermarkets.

To prepare rice sticks, pour about 2 inches of oil into a deep pan and heat to 375 F or 400 F. Break the rice sticks into small pieces about 3 inches long and dip them into the hot oil. The sticks will puff up almost instantly. Remove the cooked noodles with a slotted spoon and place them on a paper towel to drain. Their crisp texture will add interest to salads. Rice sticks can also be boiled for about 3 minutes and used as an accompaniment to an oriental-type stir-fry dish.
