Ingredients
- 2 1/2 cups dry pinto beans
- 5 cups water
- 1 medium-size onion, coarsely chopped
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 tbsp molasses
- 1 tsp chili powder
- 1/2 tsp pepper

Step 1
Place the beans in a large saucepan with the water and onion. Bring to a boil, reduce heat, and cook about 1 hour. Drain in a colander, reserving the liquid; set aside.
In the saucepan, heat the butter; add the garlic, and saute 1 minute. Return beans to the pan; mash with a potato masher, adding some of the reserved bean liquid if necessary. Stir in the molasses, chili powder, and pepper. Cook, stirring, until the beans form a thick puree.
Serve the Refried Beans immediately, or refrigerate for 1 day and reheat in a casserole at 350 F for 30 minutes. The beans are excellent when topped with grated Cheddar cheese.
