Mini Meatloaf Muffins

Ingredients

• 1/2 cup ketchup
• 2 T. Dijon mustard
• 2 T. chili sauce
• 1 lb. ground sirloin
• 1 small onion, chopped
• 1/4 cup regular oatmeal (or seasoned bread crumbs)
• 1 tsp. dried oregano
• 1/4 tsp. pepper
• 1 egg white

Preparation

Step 1

In small bowl, whisk 1st three ingredients together; set aside half.

In large bowl, combine other half of ketchup mixture with remaining ingredients; mix well.

Press into 4 cups of muffin pan coated with cooking spray. Spread reserved ketchup mixture on each. Bake loaves at 400 for about 25-30 min.
