Ingredients

  • 2 cups unblanched almonds
  • 3/4 cup honey
  • 2 egg whites
  • 1 tsp vanilla
  • 2/3 cup shredded coconut

Step 1

Pulverize almonds in blender, 1/4 cup at a time. Sift to remove any large pieces. Gradually blend honey into ground almonds. In mixing bowl, whip egg whites until stiff. Slowly beat in almond mixture until thoroughly combined. Add vanilla. Shape into 1-inch balls, roll in coconut and place on oiled baking sheet. Flatten with fork. Bake at 375 F for 10 to 12 minutes or until golden.
