Ingredients

  • 1 cup softened butter
  • 3/4 cup honey
  • 2 eggs
  • 1 cup carob powder
  • 1 cup yogurt
  • 3/4 cup whole wheat flour
  • 1/4 cup soy flour
  • 1/4 cup wheat germ
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 cup chopped nuts
  • 1/2 cup fruit preserves

Step 1

Cream butter with honey until light and fluffy. Add eggs, carob and yogurt; beat well. Add dry ingredients and nuts and beat again. Pour into well-buttered 8-inch baking dish. Spoon preserves over the top of batter. Bake at 350 F for 45 to 60 minutes.
