  • 5 egg whites
  • 2 tsp lemon juice
  • 5 egg yolks
  • 1/2 cup honey
  • 1 tsp vanilla
  • 1/2 cup whole wheat flour
  • 1/4 cup soy flour
  • Whipped cream, custard or frosting (your choice)

Step 1

Beat egg whites until soft peaks form; add lemon juice and beat until stiff. Beat egg yolks until thick; add honey slowly while continuing to beat. Mix in vanilla. Fold yolks into whites. Sprinkle flours onto mixture and fold together carefully. Pour into 10-by-15-inch jelly-roll pan, oiled and lined with oiled waxed paper. Bake at 375 F for 12 minutes or until cake starts to pull away from edges of pan. Tip from pan onto long strips of waxed paper. Remove baked paper from bottom of cake and roll cake up in waxed paper strips. Cool slightly. Unroll and coat cake with whipped cream, custard or frosting.
