Ingredients

  • Dressing:
  • 1 small head cabbage- shredded
  • 1 cup shredded carrots
  • 1/2 cup broccoli
  • 1/2 cup cauliflower
  • 1/2 cup chopped celery
  • 1/2 cup cherry tomatoes- halved
  • 1/2 cup chopped peeled cucumber
  • 6 Tbsp. olive oil
  • 3 Tbsp. cider vinegar
  • 4 1/2 tsp. dijon mustard
  • 1 1/4 tsp. garlic powder
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup minced parsley

Step 1

In a large bowl, combine the first 7 ingredients. In a small bowl whisk the oil, vinegar, mustard, garlic powder, salt and pepper. Pour over vegetables and toss to coat. Stir in parsley. Cover and refrigerate for 1 hour before serving.
