Ingredients

  • 3/4 cup walnuts
  • 1 cup all-purpose flour
  • 1/3 cup packed light brown sugar
  • 1/2 cup (1 stick) cold unsalted butter, cut into bits
  • 3 tbsp sweetened flaked coconut
  • 1/2 cup apricot preserves
  • 1/3 cup dried apricots
  • Confectioners' sugar

Preparation

Step 1

Preheat oven to 350 F. Line 8-inch square baking pan with foil, letting ends extend over edge on 2 opposite sides; grease foil.

In food processor, coarsely chop 1/4 cup walnuts; place in bowl. In processor, pulse remaining walnuts, the flour, sugar and butter until dough clumps. Mix 1/2 cup dough and the coconut with reserved walnuts. Pat remaining dough into bottom of prepared pan.

In small bowl, mix preserves and apricots; spread over dough. Sprinkle with reserved dough-coconut mixture.

Bake 35 to 45 minutes, until top is golden brown. Let cool on wire rack. Dust with sugar. Lift by ends of foil to cutting board; cut into 16 squares.
