Ingredients

  • 4 Fat lamb shanks
  • 4 small chillies
  • 2 tbspn coriander
  • 1 tbspn oregano
  • 2 good pinches of salt and pepper
  • 1 tbspn flour
  • Two carrots chopped
  • Two celery chopped
  • 4 tblspn balsamic vinegar
  • 1 glass white wine
  • 2 tins peeled tomatoes
  • small tin of anchovies.

Preparation

Step 1

In pestle and mortar pound coriander, oregano and chilli. Add salt and pepper and flour.

Roll lamb shanks in seasoning.

Add oil to casserole pot. Brown off shanks until gold and crispy.

Add carrots, celery and onion. Brown veggies and add rosemary leaves. Cook slowly.

Add anchovies, balsamic vinegar. Cook until evaporated. Add glass of whie wine and tins of peeled tomatoes.

Add shanks. Cover and cook slowly
