  • 1 3/4 cups flour
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup dates or raisins
  • 1 1/2 cups applesauce
  • 1/2 cup walnuts or pecans, chopped
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 3/4 tsp salt

Step 1

Cream shortening and sugar together well. Add eggs and vanilla and beat well. Use a portion of the flour in which to dredge and chop the dates (if used), raisins and nuts. It keeps the fruit pieces separate and allows for better distribution of fruit and nuts.

Add spices, soda, salt and baking powder to remaining flour. Add it alternately to the batter with the applesauce. Fold in floured fruit / nuts. Pour batter into oiled 9-by-12-inch pan and bake at 350 F for 40 to 45 minutes.
