Ingredients

  • 1 lb. scallops, rinsed and patted dry
  • 2 Tbsp. margarine
  • 2 Tbsp. olive oil
  • 1/2 cup mushrooms, sliced
  • 1/2 cup green onions, chopped
  • 1/2 cup Miracle Whip
  • 1/4 cup flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups milk
  • 2 tsp. lemon juice
  • Grated Parmesan

Step 1

Heat the olive oil and margarine in a large skillet. Make sure the oil is hot. Sauté the scallops for 2 minutes on one side, then turn and saute the other side for 2 minutes. Remove the scallops and add the mushrooms and onions and sauté until the onions are translucent. Remove and set aside with the scallops.

Heat the Miracle Whip over low heat; blend in the flour, salt and pepper. Add the milk and lemon juice, stirring until thickened. Add the scallops, mushrooms and onions and stir gently to mix.

Spoon into scallop shells, sprinkle with Parmesan and put under the broiler until cheese is melted.
