Ingredients

  • 3 1/2 cups flour
  • 1 tbsp baking powder
  • 2 tsp ground ginger
  • 1 tsp each: baking soda, salt and cinnamon
  • 1/2 tsp ground cloves
  • 4 large eggs, beaten
  • 1 1/2 cups sugar
  • 1 cup light brown sugar
  • 2 sticks (1 cup) butter, melted
  • 1 can (16 oz) pure pumpkin

Step 1

Grease and flour two 9" X 5 " loaf pans. Preheat oven to 350°.

Mix flour, baking powder, ginger, baking soda, salt, cinnamon and cloves in a large bowl.

Whisk eggs and sugars in a medium bowl; whisk in butter until fully incorporated and then the pumpkin.

Beat wet ingredients into dry ingredients until smooth; divide between prepared pans.

Bake until golden brown and a a cake tester comes clean, about 50 minutes.

Let cool for 5 minutes and turn onto a wire rack to cool completely.
