Ingredients
- FILLING:
- 3 Tbsp. unsalted butter
- 1 medium onion, chopped fine
- 1 pound white mushrooms, sliced
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup all-purpose flour
- 1/2 tsp. dry mustard
- 2 cups milk
- 1 pound thick-sliced deli ham, chopped
- 1 cup frozen peas
- DOUGH:
- 1 cup all-purpose flour
- 1/4 tsp. cayenne pepper
- 6 Tbsp. unsalted butter, softened
- 1 cup shredded sharp cheddar cheese

Step 1
For the Filling: Adjust an oven rack to the middle position and heat the oven to 375 degrees. Melt the butter in a large skillet over medium-high heat. Cook the onion until softened, about 3 minutes. Add the mushrooms, salt, and pepper, and cook until the mushrooms are soft and most of the liquid is absorbed, about 7 minutes. Stir in the flour and mustard and cook until it begins to brown, about 1 minute. Stir in the milk, bring to a simmer, and cook until slightly thickened, about 5 minutes. Add the ham and peas, then transfer the mixture to a 13x9-inch baking dish. Set aside.
For the Dough: Pulse the flour and cayenne in a food processor. Add the butter and pulse until the flour is pale yellow and resemble coarse cornmeal. Transfer the dough to a floured work surface, sprinkle with the cheese, and knead until the cheese is well incorporated. Pinch off 1-inch pieces of the dough, roll each into a ball, and pat into 1/4-inch thick rounds. Place on top of the ham mixture, covering the top completely. Bake until the filling is hot and the top is deep golden brown, about 35 minutes. Let cool for 5 minutes. Serve.
