  • 1 1/4 cups all-purpose flour
  • 1 cup whole-wheat flour
  • 1 cup lightly packed brown sugar
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 egg
  • 1 cup plain yogurt
  • 1/3 cup vegetable oil
  • 2 cups diced peeled apple
  • 1/2 cup shredded Cheddar cheese

Step 1

Preheat oven to 375 F. In a large bowl, combine all-purpose flour, whole-wheat flour, brown sugar, baking soda, cinnamon and nutmeg.

In another bowl, beat the egg. Add yogurt, oil, apple and cheese and stir to combine. Add to dry ingredients and stir just until moistened. Spoon batter into prepared greased or paper-lined muffin tins. Bake for 18 to 20 minutes or until muffins are firm to the touch.

Depending on the size of your muffin tin, you may wind up with extra batter. Testers got 12 muffins from a newer tin with deep cups, 18 muffins from one with shallower cups.
