POTATO*****Potato Bisque

This is super cold - like vichysoisse but without all the added fat from whipping cream and half and half.

Ingredients
- 6 servings
- 4 strips bacon, diced - optional - I haven't tried this and it's not included in the point count
- 1 1/2 cups chopped leeks, white and light green part only
- 1 1/2 pounds Yukon Gold Potatoes, peeled and diced
- 5 cups chicken stock
- 1 tablespoon chopped fresh thyme
- 1 cup sour cream - 5%
- salt and pepper

Preparation
Step 1
* In a large pot, cook bacon over medium heat until crisp. Remove bacon and reserve.
* Reduce heat to medium low and cook leeks (in 2 tbsp. butter if omitting bacon) until soft, about 5 minutes. Add potatoes, chicken stock and thyme, cover loosely and simmer until potatoes are tender, about 20 minutes.
* Remove from heat and purée. Strain soup (Optional - the straining creates a very smooth texture but it takes forever and it's a pain in the ass. The soup is still very good without straining it.) and return to pot. Stir in sour cream with stick blender and season to taste.
* Serve bowls of soup hot garnished with grated cheddar, reserved bacon or cold with a sprinkle of chives or green onion.
