Rigatoni's Calzones

My favorite calzone! I used to order them all the time at Rigatoni's in Warwick and one day I dissected one to find out exactly what was inside and the real secret ingredient which adds so much tastiness is pickled green peppers, sliced thinly and scattered through the calzone! Delicious!

- Filling:
- salami
- ham
- pepperoni
- sliced tomato
- provolones
- mozzarella
- pickled green peppers, diced small
- Sliced black olives

Preparation
Step 1
Jenny's Calzone Dough:
1 package yeast (2 1/4 teaspoons)
1 cup warm water
1 tsp sugar
1 tsp salt
2 tbsp vegetable or olive oil
2 1/2 cups flour
Put all ingredients in bread machine in order ecommended by the manufacturer.
Let dough get mixed and kneaded to end of FIRST kneading cycle only!!
Remove dough and let rest 5-10 minutes to relax dough.
Divide dough into 4 pieces.
Form calzones as desired, being sure to cut a vent in the tops to vent.
To make with an electric mixer....
Proof yeast in warm water with sugar.
Place flour and salt in mixing bowl. Add oil. Add warm water with yeast and sugar.
Mix just until it pulls away from the sides and forms a ball.
Let rest 5 minutes.
Then knead with kneading blade for 5 minutes.
Remove dough from bowl and divide into 4 pieces. (let rest if necessary 10-12 minutes to relax dough)
Make calzones as desired, being sure to cut a vent in the tops to vent.
Bake calzones at 375 degrees for 30-40 minutes.
