Grandma Ruperts Zucchini Bread

Wonderful Zucchini Bread from Lee's Grandmother Edith Rupert

Ingredients

  • 2 Cups Sugar
  • 3 Eggs
  • 2 Tsb Vanilla
  • 3 Cups Flour
  • 1 Tsp salt
  • 1 Tsp Baking Soda
  • 2 Tsps Baking Powder
  • 1 Tsp Nutmeg
  • 1 Tsp Cinnamon
  • 1 to 1-1/2 Cup Nuts (Optional)
  • 1 to 1-1/2 Cup Raisins (Optional)
  • 1 to 1-1/2 Cup Coconut (Optional)
  • 1 Cup Oil
  • 3 Cups Grated Zucchini

Preparation

Step 1

Beat Eggs and Sugar until Creamy. Add Oil and Vanilla and Mix. Add all dry ingredients, Zucchini and mix. Add raisins, coconut and nuts and mix.

Baked in greased and floured pan at 350 degrees for about 1 hour to an 1 hour an 20 minutes, depending on your oven. Done when knife comes out clean.
