Roasted Garlic Cauliflower

Ingredients

  • 3 cloves of minced garlic
  • 3 tablespoons olive oil
  • 1 large head cauliflower, separated into florets
  • 1/3 cup grated Parmesan cheese
  • Juice from 1 lemon
  • salt and black pepper to taste

Preparation

Step 1

1. Preheat oven to 450°F. Cut cauliflower into florets and put in a single layer in an oven-proof baking dish. Toss in the garlic. Sprinkle lemon juice over cauliflower and drizzle each piece with olive oil. Sprinkle with salt and pepper. Toss all ingredients until combined.
2. Place casserole in the hot oven, uncovered, for 30 minutes, stirring halfway through.
3. Remove from oven and sprinkle generously with Parmesan cheese. Broil for 3 to 5 minutes, until golden brown. Serve immediately.
