Ingredients
- 1.5 lbs. carrots, peel, sliced
- 1/2 cup mayonnaise {regular is best}
- 2 tablespoons chopped onion
- 2 Tbsp. prepared horseradish {or 1 T. horseradish powder with 2 T. water}
- 1/4 teaspoon salt
- 1/8 tsp. penzeys fresh ground pepper
- 1/4 cup crushed saltine crackers {about 7}
- 2 teaspoons melted butter

Step 1
Preheat oven to 350°F.
Put carrots in a large saucepan and cover with water. Bring to a boil and cook until just tender, about 10 minutes. Drain. Place in an ungreased 1-quart casserole dish.
Combine mayonnaise, onion, horseradish, salt and pepper. Mix well. Spoon over the carrots.
Combine cracker crumbs and butter and sprinkle over the carrots.
Bake, uncovered, 20-30 minutes or until heated through.
