Preparation
Step 1
1. Set the oven at 350 degrees. Have on hand two 8-1/2 by 4-1/2 inch loaf pans. Butter the pans and dust them with flour, tapping out the excess.
2. In a large mixing bowl, break up the clumps of brown sugar with a wooden spoon. With a whisk, stir in the granulate sugar, flour, baking soda, salt, cinnamon, and nutmeg.
3. In a medium mixing bowl, mash the bananas. With a wooden spoon, stir in the eggs, vanilla, buttermilk, orange rind, and butter.
4. Add the flour mixture to the egg mixture, stirring until just combined. Stir in the chips and walnuts.
5. Divide batter between the pans. Bake the cakes for 1 hour and 15 minutes or until the top is firm to the touch and a skewer inserted into the cake comes out clean.
6. Set the cakes on a wire rack to cool for 15 minutes. Then turn the cakes out of the pans and set sight side up to cool.
