Ingredients

  • Classic Vinaigrette:
  • 1 cup baby arugula
  • 1 cup baby spinach
  • 1 tablespoon basil leaves
  • 1/3 cup cherry tomatoes, sliced
  • 2 ounces green beans
  • 1/4 yellow bell pepper, sliced
  • 1/2 cup tuna packed in olive oil, drained
  • 2 tablespoons nicoise olives
  • 1 tablespoon Classic Vinaigrette
  • 1/4 cup white-wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 tablespoon minced shallots
  • 3/4 cup extra-virgin olive oil
  • Coarse salt and freshly ground black pepper
  • Directions
  • In a small bowl, whisk together vinegar, mustard, and shallots. Add olive oil in a slow, steady stream until emulsified. Season with salt and pepper.
