Ingredients

  • Dressing:
  • 4 cups elbow macaroni
  • 1 cup diced celery
  • 1/4 cup chopped red pepper
  • 1/2 cup finely chopped shallots or green onions
  • 1/4 cup white wine vinegar
  • 3/4 tsp salt
  • 2/3 cup mayonnaise
  • 1 Tbsp granulated sugar
  • 2 tsp Dijon mustard
  • 1/4 tsp pepper

Preparation

Step 1

In large bowl, combine shallots, vinegar and salt; let stand for 10 minutes. stir in mayonnaise, sugar, mustard and pepper.

Meanwhile, in large pot of boiling salted water, cook pasta until al dente, 8 to 10 minutes. Drain and rinse under cold water; drain well. Add to dressing.

Add celery and peppers; toss to coat evenly. Cover and refrigerate for 1 hour or for up to 24 hours. Makes 12 servings.
