Ingredients

  • 1 cup brown sugar
  • 1 cup whole wheat flour
  • 1 cup unbleached white flour
  • 2 tbsp bambu, caffix or other grain coffee powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup soy margarine or butter
  • 4 medium apples, thinly sliced
  • 8 ounces tofu
  • 6 tbsp soymilk
  • 1 egg
  • 1 tbsp honey
  • 1/4 tsp lemon juice
  • 3/4 cup chopped walnuts
  • 1 tsp baking soda

Step 1

Preheat oven to 350 F.

Mix together the brown sugar, both flours, grain coffee powder, cinnamon and nutmeg. Using two knives, a pastry blender, or a food processor, cut in the margarine until the mixture becomes crumbly.

Press one half of this mixture into a 9-by-13-inch well-oiled baking pan. Layer the apple slices on top.

In a food processor or blender, mix the tofu, soymilk, egg, honey and lemon juice until very creamy.

Add the walnuts and baking soda to the remaining dry mixture. Stir the tofu mixture into this dry mixture and pour evenly over the apples.

Bake for 20 to 30 minutes until the top is springy.
