Ingredients

  • 1/2 cup water
  • 1/4 cup sugar
  • 2 tsp cornstarch
  • 1 tbsp minced peeled fresh ginger
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 cups mandarin orange sections (6 to 8 Clementines or Satsumas)
  • 1 tbsp fresh lemon juice

Step 1

In a medium saucepan over medium-high heat, whisk together the water, sugar, cornstarch, ginger and salt. Bring to a boil and cook for 1 minute, or until thick. Remove from the heat and stir in the vanilla, oranges (and any accumulated juices), and lemon juice. Return to low heat and cook just until warmed through.
