- 1 two-layer white cake mix
- 3 egg whites
- 1-1/2 cups half-and-half
- 1/3 cup cooking oil
- 1-1/2 tsp. chai spice blend (or 1 tsp. pumpkin pie spice + 1/2 tsp. ground cardamom)

Step 1
Preheat oven to 350F (or whatever the cake mix calls for). Mix cake mix, egg whites, half-and-half, oil and spices with an electric mixer until combined, then beat for 2 minutes (or according to the cake mix package directions). Line cupcake pans with paper liners. Fill each cupcake about 2/3 full. Bake 16-18 mins, or until done. Cool on wire rack, then remove cupcakes from pan and cool on white rack.
Frost with vanilla butter frosting and sprinkle with chai spice blend.
