Ingredients
- FROSTING:
- 3/4 cup softened butter
- 1/3 cup icing sugar
- 1 tsp lemon juice
- 1 1/4 cups flour
- 1/2 cup cornstarch
- 1/4 cup softened butter
- 3/4 cup icing sugar
- 1 tsp lemon juice
- 1 tsp grated lemon peel
- 1 - 3 drops yellow food colouring, optional

Preparation
Step 1
In a mixing bowl, cream butter and sugar until light and fluffy, beat in lemon juice. Combine the four and cornstarch; gradually add to the creamed mixture. Shape into two 8-in roll; wrap each roll in plastic wrap. Refrigerate for 2 hours or until firm.
Unwrap and cut into 1/4 in. slices. Place 2 in. apart on ungreased baking sheet. Bake at 350 for 8 -12 minutes or until firm to the touch. Remove to wire racks to cool.
For frosting, in a small mixing bowl, combine the butter, sugar lemon juice, lemon peel and food colouring until smooth. Frost cooled cookies. Yield 5 dozen.
