Vanilla Bean Cheesecake

Better to make 2 separate cheesecakes with this otherwise takes forever to cook. Make batter and pour into 2 8" pans. Buy box of graham crackers and process them into crumbs.
Make rasberry coulis to drizzle over the top

Ingredients
- 2-1/2 lbs Philly cream cheese
- 1-1/2 cups of sugar
- 2 TB fresh orange zest
- 2 ts vanilla
- 5 large eggs plus 2 yolks
- 1/2 plain yogurt
- 1/4 cup whipping cream
- For the crust
- Package of ground graham crackers or grind them yourself
- Melted butter/1 stick or more

Preparation
Step 1
Put the crumbs in a bowl and pour on melted butter and mix until sticks together in your hand.
With the aid of the back of a spoon, press a thin layer of crumbs onto the bottom and sides of the spring form pan.
In the food processor, put cheese, sugar, yogurt, cream and vanilla. Pour into a large mixing bowl and whisk in the eggs one at a time, then the yolks. Pour into the crust and bake for 10 mins at 400 and then LOWER the temp to 200 for 1-1/4 hours or until done and still a bit wobbly in the middle ( abiut an inch) It will set more while cooling.
Leave in pan 20 minutes before removing the sides.
Can decorate with fresh raspberries glazed with warm apricot or apple jelly brushed on top.
