Ingredients
- 4 garlic cloves chopped
- 2 tsp ground cumin
- 1/2 tsp chili powder
- 1 tb veg oil
- 4 potatoes, sliced
- 8 oz baby carrots
- 2 onions, thinly sliced
- S&P
- 1 Whole Chix
- Salsa
- 1 tb oil
- 1 onion, thinly sliced
- 6 tomatillos husked & quartered
- 1 garlic clove, chopped
- 3/4 c cilantro

Preparation
Step 1
In small bowl, mix garlic-oil
toss veggies, add to cooker with S&P
Rub chix with mix, S&P
Place on top of veggies
Cook 6 hours low
Strain liquid, boil about 5 minutes
Salsa
heat oil, cook onion about 10 min
puree with rest
