- 2 CUPS RICOTTA, STRAINED
- 2 100G CUBES ROBIOLA FRESCA CHEESE
- 1 WHOLE EGG
- 1/4 CUP GRATED PARMIGIANO
- 2 TBSP BLACK TRUFFLE PASTE
- 1 TBSP FINELY CHOPPED PARSLEY
- 4 CUPS FINELY DICED ASSORTED MUSHROOMS
- 2 TSP MINCED GARLIC
- 3 TSP GRAPE SEED OIL
- PINCH OF SALT AND PINCH OF WHITE PEPPER
- TOMATO COULIS:
- 2 CUPS FRESH TOMATOES---USE GRAPE TOMATOES IF YOU CANNOT GET GOOD TOMATOES---GRAPE TOMATOES PROVIDE A NICE RED SHEEN---MEDIUM DICE
- 1 TSP MINCED GARLIC
- 3 TBSP OLIVE OIL
- 3 CUPS POMODORE SAUCE--AL CUCINO SAUCE
- SALT AND PEPPER TO TASTE
- 2 TBSP UNSALTED BUTTER
- PURSES:
- 8 TO 10 CREPES--10" PAN
- 12 -16 BLANCHED LEEK STRANDS (NO WIDER THAN A SHOELACE) 6 TO 8 INCHES LONG, CUT FROM THE DARK GREEN TOP.

FILLING:
IN LARGE SAUTE PAN, HEAT GRAPE SEED OIL OVER HIGH HEAT
ADD MUSHROOMS AND GARLIC AND SAUTE FOR APPROXIMATELY 2 MINUTES. SEASON WITH SALT AND PEPPER AND PARSLEY
REMOVE FROM PAN AND LET COOL
WHEN MUSHROOMS ARE COOL, COMBINE WITH ALL OTHER INGREDIENTS SEASON WITH SALT AND PEPPER AND RESERVE IN REFRIGERATOR.
TOMATO COULIS:
IN LARGE SAUTE PAN, HEAT OLIVE OIL OVER MEDIUM HEAT
ADD TOMATOES AND GARLIC, SEASON WITH SALT AND PEPPER
SAUTE APPROXIMATELY 2 TO 3 MINUTES
ADD POMODORO SAUCE AND SIMMER FOR ANOTHER 2 TO 3 MINUTES
WHISK IN WHOLE BUTTER
PLACE IN SAUCE PAN AND BLEND WITH HAND IMMERSION BLENDER AND STRAIN.
RESERVE FOR SAUCE FOR BEGGARS PURSE
PURSES:
TO BLANCH LEEK STRANDS, FILL A SMALL POT WITH WATER.
ADD A PINCH OF SALT AND BRING TO A BOIL
PLACE LEEKS IN WATER FOR 5 TO 8 SECONDS. REMOVE TO AN ICE BATH.
WHEN COMPLETELY COOLED REMOVE AND PAT DRY FOR LATER USE
WHEN CREPES HAVE COOLED, SPOON A LITTLE OF TH CHEESE FILLING IN THE MIDDLE OF THE CREPE
DRAW UP THE SIDES OF THE CREPE AOUND THE FILLING TO CREATE A PURSE LIKE A BUNDLE
SQUEEZE TIGHT TOGETHER AT THE TOP AND TIE WITH 1 TO 2 BLANCHED LEEK STRANDS. LIGHTLY SPRAY A SHEET PAN AND PLACE PURSES IN A 400 DEGREE OVEN FOR ABOUT 8 TO 10 MINUTES. IF CREPES ARE MORE BROWN TIME IS LESS--UNTIL LIGHTLY GOLDEN BROWN WITH TOPS CRISP
USING A SPATULA CAREFULLY REMOVE PURSES AND SERVE ATOP A SMALL SPOONFUL OF WARM TOMATO COULIS
