Ingredients

  • 1 1/2 pounds ground beef
  • 2 Garlic cloves
  • 1 medium onion chopped (about 2 cups)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cup white rice
  • 2 cans (14.5oz) diced tomatoes in juice
  • 1 can (3.8oz) sliced black olives
  • 1 package (4oz.) crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 8 large bell peppers
  • 1 (16oz.) can tomato sauce

Step 1

Preheat oven to 350 degrees. Lightly grease 13x9 casserole dish

In large skillet, brown ground beef, garlic, and onion over medium heat. Season with salt and pepper. Stir in rice, 1 can diced tomatoes, olives, 8 oz. tomato sauce, and half mozzarella and feta cheese. Set aside.
Remove tops, seeds and membranes from the peppers. Trim of silver from bottoms of each, if necessary, to make the peppers stand upright. Divide the beef mixture evenly among pepper and stand in prepared pan

Mix tomato sauce and diced tomatoes and pour over and around peppers and top with remain cheese. Cover with foil and bake in preheated oven for 45 minutes. Uncover and bake for 15 to 25 minutes until peppers are soft and cheese and sauce are bubbling.
