Ingredients

  • 1 cup cooked kidney or romano beans, pureed
  • 1 1/2 cup granulated sugar
  • 3/4 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp salt
  • 1/2 cup canola oil
  • 4 eggs
  • 1 tsp vanilla
  • 1/2 cup walnuts optional

Preparation

Step 1

Spray bottom only of 13 X 9 baking pan with non stick cooking spray

In mixing bowl, combine beans, sugar, flour, cocoa and salt.
Add oil, eggs and vanilla.
Beat on low speed or by hand. until smooth.

Pour batter into pan.

Bake in 350 F over for 30 minutes or until tester inserted into centre comes out clean.

Cool in pan on wire rack.

Cut into squares.
