Angel Food Cake with Warm Mandarin-Ginger Sauce

Sometime between late October and mid-November, you'll start to see the familiar wooden crates in the supermarket produce section that hold either Satsuma or Clementine mandarin oranges. Most of us think of these little gems as perfect snacks, but they're also wonderful for cooking. Here, they're paired with fresh ginger in a mouthwatering warm, sweet, and spicy sauce that dresses up angel food cake just perfectly. Try it over ice cream or on pancakes, too!

Angel Food Cake with Warm Mandarin-Ginger Sauce 0 Picture

Ingredients

  • 1/2 cup water
  • 1/4 cup sugar
  • 2 tsp cornstarch
  • 1 tbsp minced peeled fresh ginger
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 cups mandarin orange sections (6 to 8 Clementines or Satsumas)
  • 1 tbsp fresh lemon juice
  • Angel food cake

Preparation

Step 1

In a medium saucepan over medium-high heat, whisk together the water, sugar, cornstarch, ginger and salt. Bring to a boil and cook for 1 minute, or until thick. Remove from the heat and stir in the vanilla, oranges (and any accumulated juices), and lemon juice. Return to low heat and cook just until warmed through. Slice the angel food cake and top with warm sauce.
