Banana Oatmeal Cookies

2011-10: I made these cookies and found them to be too heavy. I changed the recipe already (flour now reduced to 1 cup (original calls for 1 1/2 cups)) and cinnamon increased to 1 1/2 tsp (original calls for 1 tsp).

This is a childhood favorite. My grandma would always make these cookies for my sisters and me. She would call the chocolate chips ‘chocolate bitties.’ When I make these cookies, the way my home smells really brings back the memories of my grandma. She passed away last year at the age of 99.’

Ingredients
- 3/4 cup solid vegetable shortening
- 1 cup sugar
- 1 egg
- 1 cup mashed bananas
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 2 cups quick oats
- 1 cup chocolate chips

Preparation
Step 1
Preheat oven to 400 F. Mix shortening, sugar, egg and bananas well. Add flour, baking soda, salt, cinnamon and nutmeg. Stir in oats and chocolate chips.
Drop by rounded tablespoons onto baking sheet. Bake 8 to 10 minutes. Cool on wire rack.
