Ingredients

  • Spinach
  • Zucchini
  • Onion
  • 2 eggs
  • 100 gms Arborio rice
  • parmesan cheese
  • salt and pepper
  • Pastry
  • 300 grams flour
  • 1 tablespoon oil
  • 5 fld. Oz. water
  • pinch of salt.

Preparation

Step 1

Mix together and roll out as thin two thin sheets.


Method

Grease baking tray. Place one sheet of pastry.

Blanche spinach and chopped stalks for two minutes. Place in bowl of icy cold water.

Shred zucchini and finely slice onions. Drain and chop veggies. Add eggs, rice parmesan cheese salt and pepper. Place in baking tray.

Cover with sheet of pastry and brush with eggs. Sprinkle sea salt.

Bake in 150° for 50 minutes. Let cool and dice.
