Ingredients

  • 2 cups lentils
  • 4 cups water
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp oil
  • 1/2 cup chopped green pepper
  • 1 (16 ounce) can tomatoes
  • 1/2 tsp thyme
  • 1/2 tsp marjoram
  • 2 tsp salt
  • 1 (8 ounce) can tomato sauce
  • 1/2 tsp sage
  • 8 ounces grated Cheddar (medium or sharp) cheese

Preparation

Step 1

Cook lentils in 4 cups water for 30 minutes, until tender. Drain and place lentils in a 13-by-9-inch baking dish.

Saute onions and garlic in two tablespoons of oil. Stir in the rest of the ingredients except the cheese.

Add onion mixture to the lentils and cover with foil and bake for 1 hour at 375 F. Remove foil, spread cheese on casserole and bake 10 to 15 minutes more, or until cheese melts.
