Ingredients
- 3/4 cup warm water (105 to 115F)
- 1 teas active dry yeast
- 6 Tbl olive oil
- 2 cups all-purpose flour, plus more for rolling
- 1 teas kosher salt

Step 1
Mix the water & yeast in a medium bowl & let stand for 5 minutes until foamy. Add 2 Tbl of olive oil, the flour, & salt & stir until combined.
Transfer the mixture to a lightly floured flat surface and knead until the texture of the dough is smooth. Grease the bottom and sides of a large bowl with 1 Tbl of the remaining olive oil. Add the dough and turn to coat in the oil. Cover with a cloth and place in warm place until doubled in size: about 1 hour.
Heat your grill to high.
Gently press on the dough to release some of the air and transfer to a lightly floured surface. Divide the dough into 2 equal pieces and roll each into an 8" circle. Brush the tops with 1 1/2 Tbl olive oil, place on the grill & cook until golden brown and lightly charred on the bottom, 3-4 minutes. Brush the top side of the flat breads with the remaining 1 1/2 Tbl of olive oil, turn over, and continue grilling until lightly golden brown on the bottom, 2-3 minutes longer.
