Ingredients
- 1 1/2 lb lean hamburger meat
- 1/2 cup chopped onion
- 2-3 cloves of garlic-minced
- 1-6 oz can tomato paste
- 1- 1 lb 12 oz can pear tomatoes
- 1-8 oz can tomato sauce
- 2-12 oz cans of V-8 tomato juice
- 2 pkgs dry spaghetti sauce mix
- 1-12 oz carton ricotta cheese or cottage cheese
- 1-16 oz pkg shredded mozzarella cheese
- 1 egg-beaten
- 1/2 cup shredded parmesan cheese
- 1-10 oz pkg frozen chopped spinach-thawed & squeezed dry
- 1-1 lb pkg lasagna noodles
- fresh parsley for garnish
- Optional: fresh sliced mushroooms

Step 1
Brown hamburger with onion and garlic; add tomatoes, tomato juice, tomato paste, tomato sauce and dry spaghetti mix. Simmer for 10 minutes.
In a small bowl mix beaten egg, ricotta cheese, and spinach.
Spray 10" x 14" X 3 1/2" deep rectangle pan with PAM.
Pour small amount of meat sauce to cover bottom of pan. Then layer with a layer of lasgna noodles, ricotta cheese mixture, sprinkle mozzarella cheese and continue layering with the meat sauce, noodles, cheese mixture and ending with the cheese layer on the top sprinkled with mozzarella cheese.
*Three layers of pasta, meat sauce & cheeses.
Cover tightly with foil and set pan on a cookie sheet.
Bake at 375° for 1 hour or until done. The last five minutes remove foil add parsley and parmesan cheese to the top and crisp.
Remove from oven and let set covered for 10 minutes.
Sprinkle with parmesan cheese and parsley and serve.
Optional: if you use mushrooms, layer on top of the cheese or you can mix with the meat sauce.
