Flan (Maria Amelia's Flan)

Lourdes Ryczek of Chicago shared this special Cuban recipe from her maternal grandmother, who began making it in the 1920's. "I spent a lot of time with her in the kitchen making her signature flan" Ryczek writes.

Ingredients
- Caramel:
- 1 cup granulated sugar
- 1/3 cup water
- Custard:
- 6 eggs
- 2 (15 oz) cans sweetened condensed milk
- 3 cups whole milk
- 2 teaspoons vanilla
- 1/8 teaspoon salt.
- Heat oven to 350 degrees
- Swirl sugar in water in pan to make caramel: (10-15 minutes) Pour into 9 inch cake pan, caramel will harden.

Preparation
Step 1
Mix eggs at med speed, slowly add milks, vanilla, and salt. Pour through fine sieve into cake pan. Bake in water bath for 2 hours. Cool on wire rack. Refrigerate for 24 hours.
Hard to do..but important! Run knife around edge and unmold on serving plate.
