- 1 unit boneless skinless chicken breast
- 1 oz monterey cheese with jalepeno
- 1 tsp season salt
- 1 dash pepper
- 1 tsp olive oil cooking spray
- 2 rings red pepper

Preparation
Step 1
Preheat oven to 350 °F (175 °C).
Roll or pound out the chicken breast to 1/4 inch.
Spray the chicken breast with the olive oil spray and season both sides.
Take a thin slice of the cheese and place in the chicken breast.
Roll the chicken breast like a burrito and place a toothpick to secure it in place.
Top with red pepper rings and spray one more time.
Cook for 15-20 minutes. Can be eaten in any phase of South Beach.
