Ingredients
- 3 Tbsp corn oil
- 1 Cup chopped onions
- 1 Clove garlic, minced
- 1/4 Cup dry white wine
- 3/4 Lb flounder
- 3 Carrots cut in matchstick pieces
- 3 Stalks celery cut in matchstick pieces
Preparation
Step 1
Heat 1 tbsp corn oil in medium skillet, over medium heat
Add onion and garlic; cook, stirring frequently, 5 minutes
Stir in wine
Roll up each fillet, place in shallow baking dish with seam down
Spoon onion mixture over fish
Bake, uncovered, at 375, 15 minutes
Meanwhile, heat remaining 2 tbsp corn oil in skillet over medium heat
Add carrots and celery, cook stirring frequently, 5 minutes
Spoon over fish
Bake 5 minutes longer or until fish flakes easily
