Ingredients

  • 1 12 oz. pkg. frozen hash brown potatoes
  • 6 eggs
  • 1/3 cup whipping or light cream
  • 4 oz. shredded cheddar cheese
  • 2 Tbsp. chopped chives
  • 1/4 tsp. salt
  • dash of pepper
  • 1 cup diced ham or canadian bacon

Step 1

Place potatoes in 8" square baking dish; cover with plastic wrap. Microwave high 6-7 minutes or steaming; stir once. Combine eggs, cream, chives, salt, pepper, cheese and ham. Add mixture to potatoes, cover with waxed paper and microwave 12 minutes at 50% stirring twice. Then finish cooking 3-4 minutes on high. Let stand 5 minutes, cut into squares.
