Ingredients
- 2 cups frozen shredded hash browns, thawed and drained
- 1/2 cup white bean puree
- 1/4 cup oat bran
- 2 tbsp canola oil

Preparation
Step 1
In a medium size bowl, mix together the hash browns, White bean puree, and oat bran. For tsp size scoops into small balls. Heat one tbsp of oil over medium high heat in a large nonstick skillet. REduce the temperature to medium if the oil starts to smoke. Working in batches, carefully drop several tots onto the hot skillet. REduce heat to medium and pan fry, turning occassionally, until all sides are golden brown, about 3 minutes. REpeat with the next batches of tots, adding more oil to the pan as needed. Place the browned tots on a plate lined with paper towels to blot away excess oil. Serve immediately, or let cool and store in a plastic bag in the freezer for use within 3 months(simply bake for 20 minutes at 400 degrees when ready to eat)
