Ingredients

  • Crepes:
  • 5 eggs
  • 2 C milk
  • 1/2 C water
  • 1 1/2 t salt
  • 1 t sugar
  • 1 3/4 C flour
  • 1/2 t baking powder
  • 1/4 C melted butter
  • Filling:
  • 2 C dry cottage cheese
  • pinch salt
  • 2 eggs, beaten
  • 2 t cream or milk

Preparation

Step 1

For crepes: Beat eggs, add salt, sugar, milk, and water. Mix in flour, baking powder, and butter. There should be no lumps. To a hot skillet, add 1 teaspoon oil, pour 1/4 C batter, spreading evenly over the bottom of the skillet. Fry lightly on both sides.

For filling: Blend all ingredients and mash very well.

Spread filling over crepes in a thin layer and roll up. Lay in a casserole dish and bake covered, on the middle rack, at 275 F for approximately 30 minutes, until puffy.

Cut into slices and serve.
