Ingredients
- Dry Ingredients:
- 1/2 cup spelt
- 1/2 cup oat flour
- 1/2 cup millet flour
- 1/2 cup rice flour
- 4 tsp arrowroot
- Wet Ingredients:
- 1/2 cup plus 1 Tbsp melted coconut oil or sunflower oil
- 1/2 cup maple syrup
- 2 tsp vanilla
- For Spiced Cookies, add:
- 3 tsp ground cardamom
- 3 tsp cinnamon
- For lemon poppy seed cookies, add:
- Zest of 1 Lemon
- 2 Tbsp black poppy seeds
- For lavender cookies, add
- 1 -2 Tbsp crushed dried or fresh lavender

Step 1
Prehead oven to 350 degrees
Cmbine dry ingredients in one bowl
In a separate bowl, combine oil, vanilla and maple syrup
Add wet to dry and stir to combine
To bake, on a parchment-lined or greased baking sheet, these cookies can be:
1) piped through a piping bag with no tip and then flattened wiht a moist fingertip
2) scooped with a small ice cream scop or tablespoon and made into balls, then flattened
3) or then can be rolled into a tube shape in plastic wrap, refrigerated until set and sloced into about 1/2 inch thck disks.
The cooking times ranges from 5 to 15 minutes based on the sze of the cookie.
