Ingredients

  • 2 lemons
  • 1/4 pound unsalted butter, softened
  • 1 cup sugar, divided
  • 1/2 teaspoon salt
  • 1 1/4 cups flour
  • 16 ounces cream cheese, softened
  • 3 large eggs
  • 1 cup M&M'S Chocolate Candies

Preparation

Step 1

Line a 9-inch square baking pan with foil.

Squeeze lemons; you should get about 4-6 tablespoons of juice.

Place butter, 1/4 CUP sugar and salt in a mixing bowl and beat until smooth. Fold in flour. Add 2 tablespoons lemon juice. Press mixture into the pan; refrigerate for 30 minutes.

Preheat oven to 350 F.

Remove crust from the fridge and bake for 20 minutes.

Place cream cheese and remaining 3/4 cup sugar in a mixing bowl and beat untiI smooth. Beat in eggs one at a time. Add 2 tablespoons lemon juice.

Pour cream cheese mixture over the crust.

Bake for 40 minutes, or until set. Remove from the oven and let cool to room temperature.

Top with M&M'S and refrigerate overnight. Cut into triangle shapes.

Makes about 32 bars.
