Ingredients
- 1 teaspoon grated lemon peel
- 1 teaspoon dried basil, crushed
- 1 teaspoon dried rosemary, crushed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, pressed
- 2 pounds boneless skinless chicken breast meat
- 1/2 cup low sodium chicken broth
- 1/2 cup crumbled Feta cheese
- 2 tablespoons chopped parsley

Preparation
Step 1
In a small bowl, combine lemon peel, basil, rosemary, salt, pepper and garlic; sprinkle over chicken and rub in with your fingers. Place chicken in a slow cooker; add broth. Cover and cook on LOW for 5 to 6 hours or on HIGH for 2 1/2 to 3 hours. Transfer chicken to a serving platter, discarding cooking liquid. Sprinkle chicken with Feta cheese and parsley.
SERVING SUGGESTION: Whole wheat couscous and steamed green and yellow (wax) beans.
GLUTEN FREE: Make sure broth is gluten free.
